Antonio Vivaldi (Baroque)

J.S. Bach (Baroque)

Schubert

Tchaikovsky (5th symphony is amazing)

Paganini (Violinist)

Everyone knows about the 15th-19th century composers. Here are some modern ones

Sofia Gubaidulina

Aaron Copland - (Most people might know his music but not the composer, he has been played more than once for the Olympic games.)

Vaughan Williams

Debussy

Shostakovich

John Cage (the composer of the 4’33″ – four and a half minutes of silence.)

Now adays composers are getting into electronical stuff. Not my favorite but its up to the listener to know what he likes.
